In this workshop, participants have the opportunity to create their own classic French Chef, vegetable slicer, cleaver, or utility/hunting knife using the reductive (stock-removal) technique.
Beginning with a raw, rectangular piece of annealed tool steel, you will cut, shape, and polish it into a fully functional kitchen blade, allowing for customization and scaling of the design to ensure a perfect fit for your hand. You’ll then heat your knife in the forge and quench it in oil to harden the steel. Once this is complete the knife will temper in the oven while you take a 45 minute meal break.
During the second half of the session, you'll craft a custom brass-pinned hardwood handle for your knife and have the opportunity to polish the blade to your desired finish—whether it be shiny or rugged. The final step involves sharpening the blade to a razor's edge using custom sharpening jigs, allowing for as much drama as you desire.
